Over-ripe Bananas: Don’t Throw Them Out

Fruit on the verge of spoiling can have possible uses instead of trashing them.  They maybe look bad, but they’re perfectly fine to eat and offer nutritional value.  Banana is one of them; so, here’s what you can make to those neglected over-ripe bananas.

Banana-peanut butter smoothie

1 over-ripe banana, chopped

1 cup milk

1 tablespoon peanut butter

1 tablespoon honey

1 teaspoon vanilla extract

1 cup ice cube

  • Blend all the ingredients until smooth.

Banana bread

3 over ripe bananas, mashed

1 egg, beaten

¼ c melted butter

1 c white sugar

1 ½ c all-purpose flour

1 teaspoon baking soda

1 teaspoon vanilla extract

1 pinch of salt

  • Preheat oven to 325 degrees F and grease a 9×5 inch pan.
  • Combine bananas, egg, sugar, vanilla extract and melted butter. Mix flour, baking soda and salt in a separate bowl, then add to banana mixture.
  • Pour the mixture into your prepared loaf pan. Bake in the preheated oven at 325 degrees F for 1 hour or until the inserted toothpick comes out clean.



Mash banana in a bowl, then top with oatmeal.  Stir together, and you’ll have a full breakfast.
